Willy's Potato Salad
This potato salad is a little... how should I say it... different?
It consist of baked potatoes instead of boiled.
And yogurt instead of mayonnaise.
Which in return makes it more fresh and less fat.
The procedure is also very simple.
And the best part is you get to keep all the nutritions from the potatoes since there is no boiling water to throw away
You need:
- 2kg potatoes (baking potatoes or new potatoes works best).
- 150g leek (can be substituted with spring onions).
- 200g pickled cucumber (only the cucumber minus the brine. And the jar).
- 500g yogurt (natural. I haven't tried those with fruit or berries).
Wash the potatoes. I prefer leaving the skin on, but you may peel them if you wish.
Chop in small dices and lay them on a tray.
You may season the potatoes before putting them into the oven.
For instance with grill seasoning or just salt and pepper.
I like lemon pepper for this.
Bake them on 220 degree celcius until done.
Let the potatoes cool down. Watch a movie or take a walk meanwhile.
Finely chop the leek and pickles. Mix it together with yogurt and the potatoes.
Add salt and pepper as needed.
